Ingredients
Stock:
2 stalks lemongrass
2 nubs of ginger
1 bulb fennel
6 carrots
1 head celery
2 white onions
5 cloves garlic
1 red chili (deseeded)
12 cups Water
1. Saute with a little olive oil the celery, carrots, onions and garlic until tender.
2. Add the ginger, chopped lemongrass, fennel and water. Bring to a boil then turn down to a simmer for about 2 hours.
